Thankful Thursday

I have not posted a Thankful Thursday post in a couple of weeks. I have been meaning to but just couldn't do it until today, so this post is dedicated to my uncle Eddie.



As you can read in a here in a previous post about him. I posted back in March 2009, that they had just found out he had stomach cancer. The dear Lord decided at Christmas that he needed to go on home and be with him. This was so hard and is still hard for me and the family here in North Carolina. See my uncle lived in Benton Harbor, MI and so at the time we experienced a heavy snow of 14 inches and we where unable to make it to his memorial service. My aunt this week sent us the bulletin and things from the service, however I am not a peace. I feel like I missed something and that he is still alive and I didn't get to say my goodbye. This is the first time I have ever had to experience someone close to the family being so far away and dying. I don't know how to get closer to his death. They are planning another private service for the family in July so that his ashes can be spread on Lake Michigan and the local river where he use to love to fish. I hope during that time we will be able to go up and maybe that will give me some personal closer. All I know is that one day I will see my uncle Eddie again, and I can't wait. When my mom told me that he had died and that his step daughter was with him and said he got the biggest smile on his face just before he died. I can see the family that was waiting on him at those pearly gates and he had a reason to smile. Thank you dear God for putting such a wonderful man into my life.

Little Man

Oh how our little man is growing up, he will be 18 months old this coming Friday. It's so hard to believe, everyday I see so many changes. These changes are bitter sweet. Just this morning I asked Devon which kind of lunchable he wanted in his lunch, cracker or pizza. Chandler says "cracker", I was like what? Then we did the happy dance, with him just smiling. Tonight Chandler seen the box of cereal sitting out and he says "cereal". I couldn't believe it, two new words in one day. Oh how it saddens me that he has grown so much and he is becoming a toddler, no more a baby. Then again, it's nice that he is learning to communicate with us and we can understand what he wants and needs. Oh my little man Chandler how I wish I could preserve you a little longer at this age.

Weigh In Tuesday

Today was my 2nd weigh in and I am excited to say I lost 1 pound. I would have loved for this number to have been a little higher, but I am going to say it's a loss and that's what matters! It's another pound gone and I am excited about it. Last night I started back my walking on the treadmill so I hope to see some great results come next weeks weigh in.

The recipe that I want to share with you today is Weight Watchers Pumpkin Muffins. They are only 2 points per muffin. My husband and older son just love them too.

1 (18oz) box spice cake mix
1 (15oz) can of Pure Pumpkin
1/2 cup of water

Mix well and place in your muffin cups and bake at 350 degrees for 20-25 min. (Note: I have seen some recipes that call for more what up to a cup. The points value does not change if you add more or even less.)

Happy New Year!

Happy New Year!! I hope each and everyone of you had a wonderful Christmas and that the New Year is off to a good start.

I was looking and I have not posted since December 8th, I have been so busy with the holidays and the kids being out of school and daycare that I have not had a moment to do anything.

We had a wonderful Christmas and so far so good, we are off to a great New Year. This past Christmas is one that I will never forget and I don't think any of us here in the NC mountains will forget any time soon. It all started on the 18th of December, it snowed about 14inches, then on Christmas day we had a very bad ice storm and we lost power for 3 days. The ice storm put our county in a state of emergency. My mom and dad where actually out of power for 5 days. So it's been an eventful past couple of weeks. The thing is we still are getting snow and the temps are in the single digits and wind chills below zero.

So how many of you out there do New Years Resolutions? I am one to do it, I love the fresh start to a new year. I usually do well with them too. I have several but my main goal is to loose 15-20 lbs. I started doing weight watchers once again on December 29th, I wanted to get a jump at it. This week I am proud to say I have lost 3.2lbs, and can't wait to see what next weeks weigh in brings. I know I can get to my goal and will get to my goal. I would like to be at my final goal by April 2nd, our 11th Anniversary. I received money for Christmas and I am holding on to it, as I want to have a shopping day with that money.

Starting next Tuesday I will do my weigh in of how much I have lost and try to share a wonderful healthy weight watchers recipe with you all.
